Kitcharee

This light and tasty meal provides ample nourishment!

Serves 4-6

1 cup Basmati Rice

1 cup Mung Dal

8 cups (approx.) Water
Pinch of Salt
2 tbsp. Ghee
2 cloves Crushed Garlic
3 tbsp. Mustard Seeds
2 tsp. Cumin Seed or Powder
2 tsp. Fresh Grated Ginger
2 tsp. Turmeric
2 tsp. Coriander Powder
2 tsp. Fennel Powder

1 pinch Hing (optional)
Assortment of Fresh Vegetables (Potatoes, Carrots, Peas, Greens, Zucchini, etc.), cut into bite-size pieces.

Preparation

Prepare the mung beans by soaking them overnight. Wash basmati rice and mung beans separately. Heat the mustard seeds in ghee and add other spices. Add the mung dal. Saute for a few minutes and add rice. Add water, bring to boil for a five minutes, then simmer for 30 minutes.

Add prepared vegetables, stirring into the mix. Add extra water if necessary.  Bring back to a boil, then simmer for 20 minutes until rice is fully done.
